Snowbound in Jalisco

I’m breaking out some holiday-themed (at least, loosely holiday-themed) cocktail recipes. The official name of this one, according to Esquire magazine, is “Winter Margarita.” However, I prefer “Snowbound in Jalisco.”

The skim of “snow” on this drink is egg-white froth. If you’d like to read more about using egg whites in your cocktails, visit this earlier Libation Lounge post.

SNOWBOUND IN JALISCO
1 oz Tequila reposado
1 oz Mezcal
1 oz Fresh lime juice
¾ oz Simple syrup (1:1)
1 Raw egg white OR 3 tbsp pasteurized egg whites

Combine all ingredients in a shaker (add the egg white last), add 2-3 good grinds of kosher salt from a mill, and shake without ice for 30 seconds or longer. Add ice and shake again until well chilled. Strain into a coupe or Martini glass.

It’s a great recipe with just the right amount of smokiness from the mezcal, and the egg white gives this a pleasantly creamy texture. Plus, that skim of foam … it gleams like “the moon on the breast of the new-fallen snow,” doesn’t it?

And after several of these, you’ll swear you hear mariachi reindeer.
