Daisy de Santiago – Genepy Version

Continuing the exploration of Genepy le Chamois (yada yada bike shorts yada yada). This one works. The original recipe for this one calls for Yellow Chartreuse, but I replaced that with the Genepy. Very, very nice!

Aiming to try a couple others that should bring the Genepy up front.

DAISY DE SANTIAGO

2 oz White rum

¼ oz Yellow Chartreuse (Genepy le Chamois this time)

1 oz Fresh lime juice

½ oz Simple syrup (1:1)

1/3 oz Fee Foam (optional)

Combine ingredients in a shaker with ice and shake vigorously until painfully cold. Strain into a tall stemmer or tumbler, garnish with mint sprig. (Doubles easily – used a Collins glass for that.)

Mint is out of season, so I went with a lime garnish.
